it’s a baked from scratch made-from-a-mix gluten-free, wheat-free, soy-free, nut-free, potato-free, corn-free, dairy-free, casein-free muffin.    again, haven’t been able to eat the bread products for several years now due to the big-fat-pain-in-the-butt food allergies.  picked up this namaste foods muffin mix and because i’m fancy* (*see yesterday’s post,) i added fruit juice, blueberries and some organic sugar/cinnamon topping to make mine supah-delicious.  dscf0292

um, i’ve eaten 6.  you don’t know what it’s like NOT to eat bread-stuff for years and then all of a sudden be able to eat muffins without your throat closing up.  it’s like a miracle.  a muffin miracle. 

and i’m bound to have a muffin-top right over my jeans if i keep eating these at the rate i’m going.

The muffins look great, but with all that stuff left out what could they possibly have in them? I can’t imagine having one or six after years of deprivation. You always want what you can’t have. Happy New Year!

oh – it’s pretty much a rice muffin. it’s certainly not your tasty dunkin do’s muffin, and quite possibly could be used as a doorstop, but it’s a muffin nonetheless!
i’ll take what i can get! happy new year to you!
